This is a great idea when you are having a party and you want to serve buffet food or if you have friends over for a drink, it is a tasty recipe easy to share with your guests.

Ingredients:
- 1 roll of puff pastry
- 500 gr ricotta cheese
- 50 gr of soft cheese (emmental for eg)
- 5 cherry tomatoes
- 2 courgettes
- 1 aubergine
- 1 egg
- 2 cloves of garlic
- 2 table spoon extra vergin olive oil
- basil
- parmesan
- salt and pepper

Ricotta is a great ingredient for quiche, is lighter than cream and have an amazing texture.
Method:
Preheat the oven at 180 degree (fan). Stretch the roll of pastry in a oven tray over the baking paper. Pour in a pan the oil with the garlic, let it gently fry and add the courgettes and aubergines cut in pieces, salt it and cover for 15 min until they become soft. In the meanwhile in a tureen cut the soft cheese and add the ricotta, add 1 egg, parmesan, salt and pepper and mix all together. When you see that the veggies are almost ready, add the chopped tomatoes and basil and cover for 5 min more. Let them cool before adding to the ricotta prepared earlier. Now put the mixture over the pasta roll stretched in the tray and decorate as you prefer. Put the tray in the oven and cook for 45 min.
