Almond cookies

This year I have been often in Sicily and become obsessed with their traditional almond biscuits which are famous around the world. Under the thin surface these cookies hide a moist and light almond-flavored enter. Irresistible, I have finally found the perfect the recipe just in time for Christmas. So here you go, delicious almond biscuits ready in 20min to enjoy over Christmas time.

  • 250g ground almond
  • 180g icing sugar
  • 2 egg white
  • 1 table spoon of honey
  • 2-3 drops of natural almond essence

  • Bowl
  • Baking Tray

  • Pre heat the oven at 170°C
  • In the meantime mix all the ingredients in a bowl using your hands. Create a ball
  • Dust a clean surface of the kitchen with some icing sugar and transfer the ball on it. Make a roll of 3cm wide and dice it in cubes
  • Use three fingers to press an indentation into the center of each cookie, display on the baking tray with baking paper and bake for 15min. They should be slightly brown on the outside and moist on the inside
  • Once cooled, dust with more icing sugar and serve
  • You can store them for several days in an airtight container
