I thought of sharing with you today, one of Roman's favourite recipes. A recipe that makes dinner at home more fun and convivial and has lots of bright colours to lift our mood.

Ingredients:
- 2 bell peppers
- 1 onion
- 3 tablespoons olive oil
- 1 avocado
- 6 tacos or tortillas or mini piadina in case
- coconut yogurt or normal yogurt
- 1 can of corn
- coriander
- soja sauce
- balsamic vinegar
- cane sugar
- 2 teaspoons cumin
- 2 teaspoons coriander powder
- 2 teaspoons turmeric powder
- 2 limes
- salt
- pepper
- chili

Method:
The filling
- Finely chop the onion and chop in stripes the peppers
- In a pan add the olive oil and the onion, leave it to cook for 5 min at medium fire
- Add the peppers and add all the spices plus salt and pepper as per your taste
- Cover with a lid and cook for another 5 min, then add a tablespoon of balsamic vinegar, a tablespoon of soja sauce, 2 teaspoons of cane sugar. If you like add some chili, taste and adjust per your taste
- Leave to cook for 20 min until the peppers are soft, mix from time to time and if too dry add some water (1/2 glass)
- Mash the avocado
The tacos
- Place a pan on high fire and once warm place the tortillas on it, once slightly brown they are ready to be filled. If you are using a tacos
- Place the peppers cooked as per above inside the tacos, add the avocado, some corn and 1 teaspoon of yogurt
- Finish with a sprinkle of coriander and some lime juice
