Lemony artichokes

In my family we love artichokes and this is a quick way to prepare them and serve as a side. Xmas Gnocchi, butter and sage sauce

Serves: 4 Overall time: 1h Difficulty: medium Few weeks ago I posted a gnocchi recipe typical from my hometown, today I want to introduce you to a quicker version of gnocchi but still delicious, perfect for the start of the Christmas season . “Gnocchi burro e salvia”, the silkiness of the butter mixed with the rich aroma of the sage  Mamma Flora’s Tip: Try to use starchy potatoes (the ones you use for mash or chips) and cook them with the skin. Pumpkin Risotto with Rosemary

Prep: 10min Cooking: 18 - 20min depending on the rice Serves: 2 Difficulty: easy Here one of my mum’s favourite dishes to cook for the family. I can still see myself coming back from school and smelling the pumpkin from the stairs. It’s very hearty and perfect for this cold weather.  Mamma Flora’s Tip: Use Carnaroli rice for making risotto, its grains are higher in starch content resulting in a creamy consistency and a firmer texture. Don’t be afraid of the stirring, feel the rice and take care of it. Fennel and Grapefruit Salad

Serves: 2 Prep: 15min Difficulty: easy Some of you have asked me for more salad recipes so here you go: Fennel and Grapefruit salad! This is a really easy but tasty traditional Italian salad. Very fresh and citrusy, and with fennels, so much in season right now. I hope you enjoy it. Mamma Flora’s Tip: If you don’t prefer the bitterness of the grapefruit, use instead blood oranges.
