Summer is here! Spelt salad with tuna

Prep: 15min Serves: 2 Difficulty: easy Last week I was at home in Vico and my mum prepared this delicious spelt salad that we took to the beach for lunch. I thought of sharing this recipe with you as it’s very fresh and tasty and it’s perfect for picnics or to bring to work on these hot days. I hope you enjoy it! Summer Rice Salad

Serves: 2 Prep: 20min Difficulty: easy For me this is The summer dish. My mum would prepare it in the early morning, make it rest in the fridge until noon and serve it for lunch. Perfect to take to the beach or picnics and share it with your friends! Mamma Flora’s Tip: Use a special rice for salad, the only Italian one I find in London is the brand Riso Gallo “riso per insalate”, you can find in some Waitrose or Italian Delis. Serves: 2 Prep: 15min Difficulty: easy I fell in love with this delicious salad over a lunch at Angelini Osteria in LA, a truly Italian spot in the city of angels. As soon as I was back in London I tried to recreate it remembering the ingredients and the taste. I have to say I am quite satisfied with the result. Serves: 2 Prep: 15min Difficulty: easy Some of you have asked me for more salad recipes so here you go: Fennel and Grapefruit salad! This is a really easy but tasty traditional Italian salad. Very fresh and citrusy, and with fennels, so much in season right now. I hope you enjoy it. Mamma Flora’s Tip: If you don’t prefer the bitterness of the grapefruit, use instead blood oranges. Warm Green Bean and Potato Salad

Warm Green Beans and Potato Salad Preparation: 40min Serves: 2people Difficulty: easy Such a great side, easy and fun to make. You can also serve it as a main on vegetarian dinners, adding some bread perhaps. Mamma Flora’s Tip: To keep the bright green colour of the green beans, don’t overcook them (max 5-6min), drain them and place them in a bowl over ice otherwise you can place the green beans under cold running water until the steam goes away.
