I thought of sharing this recipe with you as it’s very fresh and tasty and it’s perfect for picnics or to bring to work on these hot days. I hope you enjoy it! Summer Rice Salad

Serves: 2 Prep: 20min Difficulty: easy For me this is The summer dish. My mum would prepare it in the early morning, make it rest in the fridge until noon and serve it for lunch. Perfect to take to the beach or picnics and share it with your friends! Mamma Flora’s Tip: Use a special rice for salad, the only Italian one I find in London is the brand Riso Gallo “riso per insalate”, you can find in some Waitrose or Italian Delis. Ingredients: 200gr rice for...

Try to add some balsamico vinegar for extra richness.  Ingredients: 2 fennels 1 Pink grapefruit A handful of black olives A handful of walnuts 2 tbsp extra virgin olive oil Salt and pepper Method: Slice the fennel in thin slices Peel the grapefruit and cut a half in small cubes, slice the rest for decoration Add the...

Warm Green Bean and Potato Salad

Warm Green Beans and Potato Salad Preparation: 40min Serves: 2people Difficulty: easy Such a great side, easy and fun to make. You can also serve it as a main on vegetarian dinners, adding some bread perhaps. Mamma Flora’s Tip: To keep the bright green colour of the green beans, don’t overcook them (max 5-6min), drain them and place them in a bowl over ice otherwise you can place the green beans under cold running water until the steam goes away. Ingredients: 250gr green beans 50gr of crunched nuts 2 medium sized potatos 3 tablespoon extra virgin olive oil 1 clove of garlic dry chilli salt and pepper Method: Fill two medium sized pots with water and place them on high heat In the meantime...
