Hunter-style chicken

I have always thought cooking is magical, with few raw ingredients you can create something delicious, there are certain recipes that make you go back in time and then there are those  that help you remember a special person. This is my favourite grandma’s dish, I have learnt it from her and whenever I cook it I know she is next to me.

Ingredients:

  • 4 chicken drumsticks
  • 3-4 plum tomatoes
  • 1 carrot cut in long thin pieces
  • 1/2 celery cut in long thin pieces
  • 1/2 onion cut in long thin pieces
  • 2 tbsp olive oil
  • 1/2 a glass of white wine
  • a clove of garlic
  • rosemary and bay leaves
  • Salt and pepper

Tools:

  • 1 pan

Method:

  • Pour 2tbsp olive oil with a clove of garlic and gently heat at low heat for 3min
  • Add 1 carrot, half celery and half onion cut in long pieces, leave to cook for 7-8 min at medium heat
  • Place 4 chicken drumsticks at medium heat, add some rosemary and bay leaves. Let brown 3-4 min per side
  • Pour half a glass of white wine and let evaporate at high heat for 3 min
  • Add the 3-4 plum tomatoes, salt and pepper and leave to cook for almost 30 min
