Christmas is approaching and I want to share with you some of my family’s recipes you can make during the Christmas holidays. Today I am going to share a Classic Bolognese recipe my mum always makes on 25th Dec. You can make some nice pappardelle or rigatoni with it.
Mamma Flora’s Tip: Add some pancetta for extra flavour
Ingredients:
- 1l tomato passata
- 500g minced beef
- 250g minced pork
- 70g onion finely chopped
- 70g carrot finely chopped
- 70g celery finely chopped
- 4 tea spoons tomato purée
- 3 tbsp olive oil
- ½ glass of red wine
- ½ glass of water
- Rosemary
- Bay leaves
- Salt
Tools:
- 1 big pot
Method:
- Place the carrot, onion and celery finely chopped in the pot with the olive oil, gently heat for 7-8min
- Increase the heat to medium high and place the beef and pork in the pot with the rosemary and the bay leaves, stir it with a wooden spoon until you see some brown color forming on the bottom of the pot (more or less 10min)
- Add the wine and let evaporate (3-4min)
- Add the tomato purée and stir
- After couple of minutes add the tomato passata and the ½ glass of water
- Reduce the heat, salt it and leave to cook for 2 hours, stirring from time to time
- Serve with pasta al dente and a sprinkle of parmesan
