I fell in love with this delicious salad over a lunch at Angelini Osteria in LA, a truly Italian spot in the city of angels. As soon as I was back in London I tried to recreate it remembering the ingredients and the taste. I have to say I am quite satisfied with the result. So here the recipe for a fantastic Italo-American salad.

Mamma Flora’s tip: Add some cranberries for a sweeter taste

  • 4 bacon slices
  • 2 small turkey breast
  • 2 handfuls of spinach
  • 2 stalks of celery
  • 1 handful of rocket
  • 1 handful of almonds
  • ½ ripe avocado
  • juice of ½ lemon
  • Salt and pepper
  • 3 tablespoons extra virgin olive oil

  • 1 pan
  • 1 bowl

  • Place a pan on medium heat, once it is hot, grill the turkey and the bacon
  • In the same pan you used for the chicken, roast the almonds for 2 -3min. (Once ready you can use the mortar to make them smaller)
  • Cut the greens in small pieces (celery, spinach and rocket), place them in a bowl. Add the turkey and bacon pieces and the roasted almonds. Add the avocado cut in small pieces,  the avocado will give the creamy texture to the salad
  • Dress the salad with salt, pepper, oil and the juice of ½ a lemon, stir well and serve
